Avacado and Edamame Summer Salad





o    1 avocado, cubed
o    1 cup of pre-shelled edamame beans
o    2 cups of sliced cherry tomatoes
o    1-2 teaspoons of white truffle oil, to taste
o    1/2 teaspoon truffle salt
o    1 tablespoon fresh lemon juice 



Directions:
Toss all ingredients in a mixing bowl and chill. Simple, delicious and good for you!  Enjoy!
* The avocado will start to brown, so serve sooner than later. If you are bringing this dish to a party, simply bring the avocado with you and cut it up once you are ready to eat.
**I add flax and chia seeds to all my salads and Red onion to this recipe
